It's a quiche variant--a crust is made of grated zucchini, and, after pre-bake, topped in the manner of pizza. Thus relatively few carbs, too. Recipes are online, make sure you find the ones where the crust is grated vegetable. I made this pretty often when I lived in a cooperative house. The other day I made zucchini sticks, those I will do again when the grand kids are here, they love anything they can dip in ranch.

You cut each zucchini into 8 strips. Dip in flour with some salt and pepper, then dip in an egg and water wash, then in bread crumbs mix with panko crumbs. Then I baked them on a sprayed cookie sheet for 15 minutes.
