When I make it, I also add a little bit of orange juice - if using canned yams/sweet potatoes, be sure to drain the liquid or the casserole will get mushy. Then add the orange juice, marshmellows, butter & then sprinkle brown sugar on top. Yum!!

Casserole Ingredients:
3 cups canned sweet potatoes (mashed) - the large Princella can equals 3 cups mashed
2 eggs beaten
1/2 cup milk
1/2 t. vanilla
1/2 cup sugar
1/2 stick butter or margarine
Mix all ingredients together; pour into casserole dish
Topping Ingredients:
1 cup brown sugar
1/3 cup flour
1/3 stick butter or margarine melted
1 cup pecans (small)
Mix all together and put on top of casserole. Bake at 350 degrees for 35 minutes. Have a "yammy" meal.
**I usually double this!

We have this at every family function though so it is not just a once or twice a year thing. I grow the squash, then cook, puree and freeze them in the fall so it make prep work faster.

I double this for family and triple it for a larger group.. I have been making this for about eighteen years, some of my best recipes have come from Taste of Home. I use walnuts, and prefer the butternuts but have also used pumpkin and have a friend that uses sweet potatoes in it.
