We used to raise chickens about 20 years ago - we live out in the country - and some laid brown eggs and some laid white eggs - no difference to me. Also, they did not taste any different than the eggs from the store. DH swore that he could tell. About the only difference is that eggs from free range chickens have a brighter yellow yolk - that is because they can eat grass and bugs, etc. when they run around your yard.

Most brown eggs have a thicker shell, means a healthier bird. Also the cage free brown eggs have slightly thicker shell than the plain brown ones.

I eat a lot of eggs with my salads. Easy cheap protein. They are usually cooked and refrigerated for immediate use anytime. The white eggs often cracked before they are boiled. I do not bring them to a rolling boil. laying white, brown, blue/green eggs, etc. I have New Hampshire & Rhode Island Reds and they lay brown eggs. A lot of things goes into their eggs. They used to say there is no difference between organic and non organic vegetables. Now they are conceding that there is. For example most fertilizers contain only 3 major elements. We know vegetables require more than that. Now they are saying non-organic vegatbles are difficeint in some trace minerals, because they have been depleted from the soil.

You can't tell me a healthier bird does not produce a better egg. You may not taste the difference, but I'll rather have the healthier one. The thickness of its shell is one way to tell. Remember why DDT was banned.
