I used to have an easy zucchini bread recipe but can't find it. Tried out one I got off the computer but it came out a little compact. Used new baking powder, baking soda and flour. Can anyone give me an easy recipe. Looking for it to be a little fluffy not compact. I also used apple sauce and no oil. Any suggestions greatly appreciated. This is the only way hubby will eat his vegetable. Can I freeze any grated zucchini to use in the future. Thanks in advance for helping me. Barbara

measure out what you will need in bags and pop it in the freezer, I used to have a simple receipe but have lost it try using google saying easy receipe using applesauce it and sure to come up with one, but the applesauce is probably what made it so compac,might try using half oil and half applesauce 2|2|i also freeze exact amount into bags for later use|karrkamper|jdouglas4@mchsi.com|11:32:05|08/09/2012|

2 c sugar
1 c oil
4 eggs
2 c grated zucchini ( with skin on)
1 tsp vanilla

3 c flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon

1/2 c raisins
1/2 c nuts
2 T.orange rind

mix first 5 ingredients well,mix dry ingred and fold intowet mixture,fold in raisins,nuts and orange rind

bake at 350 i usually do mine in muffins and bake for 25 minutes and makes 24 muffins so just bake little longer for bread enjoy vickie
