We have squash, zucchini and greens galore !!! 1|1|Zucchini lasagne for sure.....you make it like lasagne, but use zucchini 'planks' as the noodles.....peel and core the zucchini, slice it about 1/4 inch thick LONGWAYS (So you have long 'planks'), nuke them in a glass dish with a little water til par-cooked, then assemble the lasagne and bake as usual :)|saint6811|waylan@comcast.net|12:36:53|06/05/2012|

work amazingly with many recipes when grated. I use grated zucchini in so many things...marinara sauces, meatloaf, quiche, eggs, other casseroles, homemade hummus...obviously muffins and other baked goods too...Grated yellow squash or pureed yellow squash goes well in cheesy casseroles, mac and cheese, etc. 3|1|Zucchini Chicken Casserole|Quietwaters|Quietwaters39@hotmail.com|19:56:00|06/05/2012|
4 chicken breasts (boiled and cubed, save broth)
4 med zucchini, sliced (1.5 to 2 pounds) You can also use broccoli
1 can cream of chicken soup
1 8 oz carton sour cream
2 pkg stove top type stuffing
1/2 cup margarine
Mix together soup and sour cream, add cooked chicken and zucchini.
In another bowl mix stuffing, season pkg, (from stove top,)and margarine. Add
1 cup reserved broth.
Put 1/2 of the stuffing mixture into an 11x9 pan, spead meat mixture on top. Spoon
remaining stuffing mixture on top.
Bake at 350 for about 45 minutes.
Zucchini also makes a wonderful relish, I can several jars every year because I have so many requests for it.

I cook one uncle bens wild rice package (flavor doesn't much matter, chicken or what ever I have). While that is cooking I brown up up some italian or breakfast sausage (crumbly). Then I mix that in with the cooked rice.
I slice the Zuc lengthwise and nuke till slightly soft. Then I scoop a little of the inside out to make them "boats" and fill the boats with the rice and sausage mix.
I sprinkle them with some parm cheese and nuke just a few minutes more till they are hot and the cheese is melted. I like my Zuc aldente but if you like soft...nuke longer.
Another goodie is slice the Zuc in rounds and saute them up with some onion, add diced tomatoes (my dad likes rotel). Season with a little italian herbs it you like. Heat through. We serve as a side dish.
