Taffy Apple Salad
2 red apples (I like braeburn, fuji, or honey crisp)--cored and diced in 1/2 inch cubes (Leave peels on )
2 green apples (I like granny smith)
1 8oz Cool Whip Lite, thawed in refrigerator
1 can crushed pineapple with the juice
1 pkg sugarfree vanilla pudding
1 cup spanish peanuts
1 cup mini marshmallows
In large bowl, mix dry pudding mix and pineapple with juice until well blended. Fold in Cool Whip. Fold in peanuts, marshmallows, and apples. Chill at least 2 hours or overnight.
Easy peasey, and mmm,mmm good! :)
You can sub butterscotch pudding for the vanilla if you want a more caramel colored and tasting salad....I prefer the vanilla myself. This makes quite a lot, about a gallon.
