I believe it means to choose your words carefully, & to think about what you're going to say before you say it.

It means if something appears to be a certain way, it probably is.
One I've heard my mom say frequently: Don't count your chickens before they hatch.
It means don't plan on something unless you know it's a sure thing.
One my dad always said: Keep your eyes & ears open & your mouth shut. You'll learn more that way.
It means be observant. If you're talking too much, you're not watching & listening, & will likely miss something.
