I take have taken this to many reunions, church suppers etc and never any leftovers. Same at home..I make it, you better be quick or it's gone! lol! Enjoy! :)

PEACH COBBLER
Preheat oven to 375º. I use 2 large canned of peaches well drained and put them in a 9x13 baking dish. DO NOT use the lemon if using canned peaches. Just drain the canned peaches and put them in the baking dish. I always double the topping for this to use.

5 cups fresh peaches, sliced 1 ½ tblsp lemon juice
1 cup flour 1 cup sugar
½ tsp salt 1 egg, beaten
6 Tblsp melted butter cinnamon

Sprinkle the lemon juice on fresh peaches and stir to coate and spread in 11 x 6 baking pan. Mix flour, sugar and salt. Add egg and toss w/ fork till crumbly and spread over the peaches in the dish. Drizzle w/ butter all over the top of the flour mixture and sprinkle lightly all over with cinnamon. Bake for 45 mins. DO NOT over bake as topping will get VERY hard!! If topping is not brown, slip under broiler for a few mins to brown. 6|2|I ended up using one from the hillbilly housewife... needed one specific for canned peaches as most call for fresh or frozen, and a actual pie crust on top, not a biscuity mix|carmenanderson|cloudcars@verizon.net|18:50:48|02/02/2012|
