boneless chicken breasts (I pound them or cut them horizontally if they are really thick so they arent more than about 3/4 inch thick)---brown on each side in skillet with a little nonstick spray. Place in 13x9 pan.
1/2 c diced green or red bell pepper (or some of both)
1/2 c sliced green onion
1/2 c sliced black olives
1 c frozen corn
1 can black beans, rinsed and drained well

toss all the veggies on top of the browned chicken in the pan.

In a bowl, mix the Santa Fe Philly Cooking Creme with a couple tablespoons of milk or half-and-half til smooth
Pour on top of the chicken/veggies. Cover pan with foil, cut a few vent holes in the foil.

Bake at 350 for about 45 mins. Remove foil, sprinkle about a cup of shredded cheddar cheese on top (use low fat!) and return to oven, bake for about 15 mins more til cheese is melted and lightly golden brown.

I served this with rice and warmed soft corn tortillas (or you could use whole wheat tortillas).....
it was super delish! :)
