I picked up 2 cases(12 each) one case of quart jars and the other pint size, they had them marked the same price as everyone else around here so I picked them up. I plan on doing some home canning this summer and hitting the apple orhard and the farmer's market, and whatever else I find on sale at the store cheap like strawberries etc.**I want to pick up more jars, but at least this is a start.

Also making bosenberry and pluot jams, along with a dozen or so other varieties of fruit jams. I like to combine flavors, such as peach/apricot or strawberry/mango - whatever I happen to have in the freezer. With several dozen fruit trees, the choices are endless.

I put up 50 pints of salsa, we use a lot of that. Zucchini relish, strawberry jam, raspberry jam, caramel apple jam, spiced peach jam, and sometimes blueberry, depending on the price to pick. Some years I do pickles, but have never found a recipe that I loved. I freeze every thing else, green beans, pea pods, berries, grated zucchini for breads, some tomatoes, (they are ok for cooking only,)spaghetti sauce, and whatever else I decide to make during the year.

I never liked relish until I had this and it is great in tuna salad ect. Great way to use up zucchini too.

10 cups chopped zucchini with skin on.
4 cups chopped onion
3 cups chopped carrots
2 cups chopped peppers
1/4 cup canning salt
2 cups vinegar
5 cups sugar
2 Tbl cornstarch, mixed with a little water to make a paste
2 tsp celery seeds
1 tsp black pepper
1 tsp tumeric
1 tsp nutmeg

Combine all vegetables with salt, let stand for 3 hours. Drain. Bring vinegar, sugar, conrnstarch and spices to a boil in large kettle. Add vegtables and stirring constantly, cook for 10 minutes. Laddle into sterilized jars, Seal, Process for 10 minutes in a hot water bath. Makes 8 pints.
