Does anybody else have some easy recipes for canning, freezing, refrigerator jams, jellies, pickles etc? Please share here.. thanks!


Easy bread & butter pickles
Original Recipe Yield 8 cups

Ingredients

* 1 cup distilled white vinegar
* 1 tablespoon salt
* 2 cups white sugar
* 6 cups sliced cucumbers
* 1 cup sliced onions
* 1 cup sliced green bell peppers

Directions

1. In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil. Boil until the sugar has dissolved, about 10 minutes.
2. Place the cucumbers, onions and green bell peppers in a large bowl. Pour the vinegar mixture over the vegetables. Transfer to sterile containers and store in the refrigerator.


I'm going to try it this week if I can get myself in the mood... I planted pickle cucumbers for the first time this season and i'm starting to pick them now.. :)

My last batch of pickles was a bust! Tasted fine, but they were limp!

it called for 8 hrs I think but I did them overnight in my crisper in the frig, how I did it was buy a bag of crushed ice and layer the cukes with ice then sprinkle salt over that then another layer, I put the onions, peppers and garlic in a big bowl with a lid with ice & salt so as not to stink up the frig, drain the water the next day or when ever you get ready to make them Linda
