I saw some at Kroger's but it was high in price now its all gone. I thought it would be getting cheaper and more plentiful by now Linda 3|2|My local SuperValu store has the store brand for about $1.59 a can, which isnt too bad I guess, and there was a fair amount on the shelves....I bought 6 cans when I saw it, lol. Pumpkin Chocolate Chip Muffins

4 eggs
2 cups sugar
1 16 oz can pureed pumpkin
1 1/2 cups oil
3 cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 package chocolate chips

In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth. Add in dry ingredients and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake 16-20 minutes at 400 degrees. Makes 24-30 muffins.

Pumpkin Pie Bars

1 box yellow cake mix with 1 cup reserved
2 eggs
1/2 c melted butter or margarine

Mix above together until smooth. Spread in a 13x9 pan, sprayed with nonstick spray. Set aside

In a large bowl, combine:
2 cans pumpkin
1 cup sugar
2 tsp pumpkin pie spice
1 tsp cinnamon
1/2 tsp salt
2 eggs
2/3 c milk

Pour over base in baking pan.

Mix together the reserved 1 cup of cake mix with
1/4 c sugar
1 tsp cinnamon

Add in 1/4 softened butter or margarine, cut together with a pastry blender or a knife til crumbly.
Sprinkle over pumpkin layer.

Bake at 350 for 45-50 minutes until a knife inserted in the center comes out clean.
Makes 15 servings

Top with Cool Whip, real whipped cream or vanilla ice cream

I just saw a display at the store, the entire end of the aisle was stocked with canned pumpkin; I remembered reading that it was hard to find but didn't buy any. Now that I see these great recipes, I might buy a can or two :)
