Joy's Haphazard Chili

These are estimations on the seasonings, I go by taste more than anything....I like to have some boldness, but not necessarily too 'hot'...and a touch of sweetness to counter-balance the acidity of the tomatoes.

1 lb ground beef
1 lg onion, diced
Brown the ground beef with the onion, drain off grease if needed.

In a 6 qt stockpot or dutch oven, combine browned beef and onions with
1 can chili beans (I use mild) NOT drained
1 can black beans, rinsed and drained
1 can of either kidney beans, northern beans, or canneli beans NOT drained
(your choice--or you can add a second can of chili beans)
1 large can diced tomatoes
1 46 oz can of V-8 or tomato juice
2 pkgs chili seasoning mix
2 tsps chili powder
1 tsp salt
3-4 tbs brown sugar
a few dashes of Tabasco or hot sauce of your choice

Bring to a good simmer over med-high heat, then reduce heat to med-low....simmer for at least 30 mins til heated through.
I actually prefer to simmer it for about an hour, or even longer on low to really get the spices to meld.

You can also make this in the crockpot, mix it all together, and cook on low for 4-6 hours.

This makes ALOT of chili, probably a gallon or so. If you'd like to make less, just halve everything. If you want more heat in your chili, add more tabasco, or you can add finely diced up jalapenos or green chilies to it.

We like to put a dollop of sour cream and a litte shredded cheddar cheese on top....
