Veggie Pie
1 cup of Jiffy mix or Bisquick
4 eggs
1/4 c canola oil
1/4 c Parmesan cheese
salt and pepper to taste
garlic powder to taste
1 tsp Italian seasoning
1 cup shredded zucchini (squeeze between paper towels to get moisture out)
1/2 c sliced fresh mushrooms
1/2 c chopped green onions
1/2 c seeded and diced tomatoes
1/2 cup shredded mozzarella cheese
Mix first set of ingredients together in a large bowl with a whisk until well blended.
Fold in veggies and cheese. Pour into a 8inch pie pan, sprayed with nonstick spray. Bake at 400 degrees for 30-35 mins until set and golden brown on top. Voila! :)
