I haven't been posting much, just a lot going on with taken care of my son's issues and now a bunch of medical problems for me. I went to the doctors office not feeling well and they thought I was having a heart attack.... now I'm 38 years old... this is not good. They did some blood work and it turns out I'm pre-diabetic -- my numbers are almost at diabetic... I don't see the difference -- if you are giving me medicine to take for it and I have to be on a diabetic diet... then pre-diabetic might as well be diabetic. They also said my blood pressure is very high and put on medication for that.... now here's where you guys come in.

I'm looking for some ideas on items that are low on carbs so I can have a little variety in my diet and some convenience foods for when I'm on the go. I figured who would know better than all the wonderful people on this board that spend ALOT of time in the grocery store Items that are low in carbs and high in fiber are a plus

Any help would be greatly appreciated. Thanks.

Saute a ground meat ( chicken, pork, turkey, beef) in a low carb teriyaki sauce. Serve inside lettuce cups.

I'll have to see what I have that is less salt though. Because of the high blood pressure, I have to be careful of the teriyaki sauce, soy sauces, etc. This stinks... but at least I like the fresh stuff foods

What do you do for snacky stuff? I'm limited to 15 carbs per snack and have to watch the fat. Then to top it off the snack can't be really salty because of the high blood pressure.

I'm just looking for something that is filling... because a serving of like 5 or 6 almonds isn't going to help the hunger

husband he is the joseph i'm rose i know confusing when i did this i didn't want to give my name but over that now. anyway he has been using low carb foods for a long time he buys them from a low carb store and amazon also has low carb items you don't find many in the stores,they are expensive actually very expensive should't you be low fat not low carb my 18 yr old son has high chlorestrol and may be like you become a diabetic scary for a kid so young. the splenda is a good choice low carb is also hard to stay on because you limited thanks for reading 7|2|thanks Rose|jdlaurie|savethosepennies@aol.com|23:12:04|07/02/2010|

I need to be low carb and low fat. I'm checking both. I'm going to try Whole Foods this weekend and see what they have. I found a yogurt which is only 3 carbs, some were in the 20's. I know that the darker grain breads are lower in carbs (pumpernickle, rye, whole wheat, grain, etc.) But I'm trying to get other ideas. I'm limited to 30 carbs per meal and 15 carbs per snack and I have to eat at least that amount of carbs each meal. I can't skip them. I met with a dietician today.

these awesome pitas and tortillas from a company called Joseph's and they are low carb, multigrain and high fiber. they taste FABULOUS and can be used as a vehicle for anything from sandwiches, eggs, veggies and hummus, or even as a crust for a pizza. i get them at stop and shop in the deli area but i'm sure other stores carry them. here is a link to the company's site.

I have found the best thing. Its called dreamfields pasta. only 5 solibul carbs per serving. compaired 2 40 plus. we have it at publix here my daughter in tenn finds it at kroger.You cant taste the difference.there is also tortilla wraps that have 5 also. look carefully it must have the 5 on the front (tortillas) hope this helps and good luck

really easy home made pimento cheese recipe (measurements aren't exact ... i do most things to taste)

2 8 oz packages of finely shredded cheese (1 should be a sharp cheddar and one can be a mix - the italian mix works really well)
1 2 oz jar pimentos
cup mayo
dash of cayenne pepper (ground NOT flakes - they make it way too hot for me)
about a tablespoon worcestshire sauce
about 1/2 tsp garlic salt or powder (doesn't matter but NOT the minced garlic)

mix the "sauce" ingredients together get it good and creamy then add in the cheese. put in the fridge for a couple of hours and salt/pepper to taste. tastes awfully good ~ even better a day after it's set in the fridge.

this is super specific too but if you could do something like this with butterball coupons or something;

we had super doubles and there were a lot of small weight packages of perdue certified chicken at my HT
I doubled those $1/1 coupons so each package was under $2 for a pound of meat or more.

then I cooked them with lots of spices (mrs dash, italian mix, whatever, as long as it's not salt) in olive oil

they keep in the fridge and with some dry sprinkle cheese they go great on top of the salad.

Does this make sense? there are tons of butterball coupons $1/1 out there and that meat would work too.

It is the absolute best === only 5 carbs per generous serving and it is DELICIOUS.

Even family that is not trying to eat low carb can't tell the difference.

It comes in elbow, penne, rotini and lasagana. I buy it at Tops and Wegman's.

I love to fry up cabbage and mix it with the rotini.

Also the rotini is great with cooked broccoli mixed in.

the family has been wanting pasta and I was going to look for spaghetti squash to mix with some pasta so it feels like i'm getting a full plate. But I might have to try this. I have wheat and whole grain pasta here and the kids can't tell the difference. They haven't even mentioned that it looks different.
