Brown 1 lb of bulk pork sausage in a large skillet (I use my cast iron skillet), drain off all the grease, reserving about 2-3 tbs. Remove browned sausage from the skillet onto a large plate. Mix 4-5 Tbs of flour with 2-3 tbs of the sausage grease, making a roux, in the skillet over medium-high heat. Stir with a fork until it is well-blended and lightly browned.

Add in about 4-5 cups of milk, stirring with a wire whisk until well-blended; add sausage back in. Add garlic powder, black pepper, and seasoning salt to taste. Lower heat to medium, bring to a light boil, then reduce heat to medium-low. Let simmer, stirring occassionally, until desired thickness. Add milk a little at a time if it's too thick.

That's it, really easy :) This makes about 5 cups of gravy, 6-8 servings with two biscuits with ample gravy per serving.

PS--I learned to make this at the little mom & pop restaurant I worked in as a waitress for 5 yrs...it was always homemade and we sold a TON of this every day :)

after adding the flour to the hot grease I add about a cup of water it doesn't lump up this way also found using a pancake turner gets the lumps out better not so much stirring this way Linda
