small round potatoes (like baby reds, yukon golds)--I used yukon golds
wash potatoes, put in pan of salted water, and bring to a boil....cook until fork-tender, remove from water and let drain.
Preheat oven to 450 degrees. Coat baking sheet (I used a jelly roll pan) with olive oil. Place potatoes on baking sheet and using a small plate or saucer, press down on them to split the skin and smash them a bit. Do it kinda slowly or they might burst all over on you, lol. Leave space between the potatoes. Brush each potato with olive oil, sprinkle with kosher or coarse ground salt, black pepper, and rosemary. (you can also sprinkle on chives, thyme, or whatever you want) Bake for 20-25 minutes until golden brown and a bit crisp around the edges.

I've been very sick since last Tuesday... my body has run the gammot.. I've been on the couch for days.. I think the worst is over. I am going to try and get the orders owed, out this week and will email you the total cost as I have it weighed. Thanks for your patience..
