does anyone have a recipe for the chicken fingers like they serve at restaurants? light and crispy?
any help is appreciated. 1|1|Shelly, try using Panko breadcrumbs to bread them.....you can oven-fry them and they will turn out crispy! :) |saint6811|waylan@comcast.net|13:17:37|02/07/2010|

Crispy Chicken Fingers

What You Need!

6 Tbsp. KRAFT Light Mayo Reduced Fat Mayonnaise, divided
2 Tbsp. milk
1/4 tsp. ground red pepper (cayenne)
4 small boneless skinless chicken breast halves (1 lb.), each cut lengthwise into 3 strips
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
2 Tbsp. KRAFT Ranch Dressing
2 tsp. chopped green onions

Make It!

HEAT oven to 400ºF. Mix 1/4 cup mayo, the milk and pepper. Marinate chicken in mayo mixture in resealable plastic bag in refrigerator 30 min.

POUR coating mix onto plate. Dip chicken, one strip at a time, in coating mix, turning to evenly coat; discard marinade. Place in single layer on baking sheet.

BAKE 20 min. or until chicken is cooked through. Meanwhile, mix remaining mayo, dressing and onions. Serve as a dipping sauce for the chicken.

Barbecue Dipping Sauce
Omit ranch dressing and onions. Reduce mayo to 1/4 cup. Mix 1/4 cup KRAFT Original Barbecue Sauce and 1/4 tsp. grated orange peel. Use as a dipping sauce for the chicken instead of the mayo mixture.

Creamy Salsa Dipping Sauce
Omit ranch dressing and onions. Mix remaining 2 Tbsp. KRAFT Light Mayo Reduced Fat Mayonnaise, 2 Tbsp. TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa and 2 tsp. chopped cilantro. Use as a dipping sauce for the chicken instead.

How to Double
Prepare as directed, doubling all ingredients. For best results, be sure to use a baking pan large enough to arrange

Thanks for looking, Donna 8|1|Speaking of bread crumbs, I bought some at a specialty shop here, they have all kinds of awesome stuff and aren't that expensive and I can't believe how wonderful they are, I made meatloaf last night and they came out so nice and firm and I used less than what I would've with the regular bread crumbs I buy :)|RebekkaVA|queen_vulture@msn.com|18:35:32|02/07/2010|

makes them really crispy. 3/4 panko crumbs to 1/4 crushed corn flakes. I bake mine like Joy and they are always crispy, not greasy
