My mother-in-law is in her 70's with several health problems and after lunch today she took a really bad fall breaking her wrist in a couple places. She is going to require surgery for her wrist -they said it's really bad, 2 fractures, bone fragments and everything is displaced(?). She does everything for her husband, so with her dominant hand unuseable, the next couple months are going to be tough for them. What I would like to do is make some meals that can be frozen for them, so that my father in law only has to do is put them in the oven. Meals that would be good for several days would be great.

I was thinking of making a lasagna and similar meals that they could freeze until they need it and then he could take a piece to work with him for lunch or dinner. I'm going to make sauce with meatballs for spaghetti (she loves spaghetti), because I figured it would be easy enough for him to make pasta to go with it. I was also thinking I could make a meatloaf for them one night and some mashed potatoes with gravy because it would be large enough for a few meals. I was also thinking a pork roast with potatoes and carrots. I have a pressure cooker, a crock pot, oven and stove to cook with, so recipes for any of these would be great. I think they would like Chili as well -- I have stuff to make that here.

The tricky part is my mother in law does not eat most sauces. She'll eat Pasta Sauce and regular gravy, but not much else on her food. She doesn't do dressings or anything of the sort.

Anyone have a good ideas for meals that I could make?

make up a pan of goulash with some elbow mac, canned diced tomatoes, carrots, ground beef or turkey, etc..

would she be ok with baked chicken in cream of chicken soup?

also send over those easy to steam bags of veggies, you just throw those in the microwave

pot roast, maybe a tuna noodle casserole, hash brown casserole...

chicken & rice (use canned gravy), carrotts
beef stew (also good for leftovers) with brown & serve rolls
quiche or another breakfast-type casserole
salisbury steak with gravy, mashed taters and a veggie
for when no one wants to cook -rotisserie chicken from the deli (Sam's Club chickens are huge!) with a side salad (either the deli-type or bagged greens) lots of versatility and leftovers

they have alot of recipes for the crockpot that are simple and tasty plus so much more

4 pork chops (I use center cut or boneless)
1-2 tbs olive oil or butter
1 lb sauerkraut, rinsed with fresh water and drained (I dont always rinse it, but I drain it) I have used the refrigerated/bagged kraut, and the canned...if using canned, I use 2 15oz cans, drained.
1 large tart apple, peeled, cored and diced (I use granny smith)
1 medium onion, chopped
1/2 teaspoon caraway seed (optional, but really makes this good)
2-3 tbs brown sugar

Use a large skillet:
Salt and pepper the chops and brown them in hot oil or butter, about 3 minutes per side. Set aside.
Add the apple, onions, brown sugar and caraway seed to the same skillet and cook for about 5 minutes, until the onion starts to look golden. Stir in the sauerkraut, and place the chops on top, including any juices that have collected. Cover the skillet, lower the heat and cook until the chops are done, about 7 minutes, depending on thickness. Do not overcook.

spam casserole

1 pkg egg noodles (the bigger bag not the newer small bags)
2 cans cream of CELERY soup
1 - soup can of milk
1 - lb (or more if you like) velveeta
1 - can spam
salt & pepper

boil noodles as directed and drain
cube velveeta and spam
in hot empty boiling pan add soup, milk, velveeta and spam stir until blended and melted well
add noddles and salt & pepper to taste

It freezes well and tastes REALLY yummy!
