Believe it or not, we used an "Instant Mashed Potato Lefse" recipe so instead of having to boil, cool, peel & rice tons of whole potatoes, we just had to stir alot to make sure they were smooth. LOL But we got a little more than 2 dozen sheets of lefse out of it & there is NO difference in the taste at all. :)

But it doesn't taste like a corn flour tortilla cuz we use potatoes & All-Purpose white flour. It's a Norwegian delicacy.
We mostly just put butter on it & roll it up to eat w/or w/out polsa (sausage links). But some like to put sugar &/or cinnamon on it, roll it up & eat it that way, of course w/out the polsa.

I seem to be able to cook & bake pretty much anything but those blasted choc. chip cookies. I've tried homemade from scratch & even the Pillsbury ready-made dough - they just do not turn out for me. LOL A friend recommended I try the Nestle's Toll House Cookie Dough, in the squares, so I bought a pkg. I'm going to try after the holiday hubbub is over. LOL

which I plan to get from her anyway, so will post it when I get mine copied.
But, making the lefse requires a lefse grill which is like a big, round elect. griddle, about the diameter of barrel. It also requires a rolling pin w/a cheesecloth like "sock" & a lefse "stick" which is a long, wooden stick (a little shorter but similar to a yard stick) w/smooth edges, to carry the rolled out dough to lay out flat on the grill & then to turn & remove the lefse sheets from the grill.
I don't believe there's any way to make it w/out a lefse grill or old-fashioned wood cookstove, altho I've made flatbread (a crisp version of lefse) in the oven using cookie sheets as it goes faster. LOL

If you are making them frocatch mixing the butter and sugars is one of the most important steps. Cream it forever. Second ONLY and i repeat ONLY use real butter. Fake will not work you get flat cookies. Thirdly and this works for either boxed or the real deal you can't make huge cookies. Use maybe a 1" round ball no bigger. If you make them bigger instead of standing up you end up with flat cookies that don't look so hot. Flat as in um pancakes lol

My mother is Norwegian - from Wisconsin - we had lefse all the time growing up whenever she had leftover mashed potatoes. She just put some flour in it - rolled it out and fried it on a dry skillet or a griddle if she had one. I have made it myself - but it never did taste as good as hers.

It is about the size of a pancake but flatter. We put butter on it while hot and rolled it up and ate it - YUMMY>

I called a family member in Minnesota after dinner tonight and placed my order for some. I really don't care if it's store bought or if the postman smashes the package on the way here...it's better than nothing. Folks here in NC don't have a clue what Lefse is! That's one thing I miss about being "up north".

I can't wait to get my goodie package of Lefse from MN!!! YUM-O!

I do love the fact that they do know what pickled fish in sour cream sauce is here in NC. We buy that by the jar at BJ's club. That's another of my favorites from "up north".

GLOGG -- SWEDISH CHRISTMAS PUNCH

Glogg, which means "glow", derives its name from the glow which is created during the burning of the sugar over the drink, and the warm glow which it creates when imbibed.
It is a traditionally served in the Swedish Christmas punch bowl and is appreciated as well by Danes and Finns as it helps to warm the cold climates during the long dark Winter season.

It is often made exclusively of dry red wine, with the most potent ingredient, Aquavit, being omitted. Glogg spices, pre-mixed in convenient packages accompanied by instructions are sold in many Scandinavian delicatessen stores, but if you're not shopping in Nordic climes this Winter, it's easy to prepare your own using the recipe given here.


1 bottle Claret, Burgundy, or other dry red wine
10 cardamom seeds
5 whole cloves
3 pieces fresh or dried orange peel
4 dried figs
1 1/2" cinnamon stick
1 cup raisins
1/2 lb. sugar cubes
1 cup blanched slivered almonds

In a large decorative kettle, pour Claret, or wine. Add whole cardamom seeds, and orange peel. Poke holes into the figs with the cloves and insert them. Add the cloved figs, cinnamon sticks, and raisins. Stir in the almonds. Cover and simmer over low heat until the mixture just begins to boil, then remove from heat. Carry the kettle away from the stove.
Place sugar cubes into an all metal sieve which has a long handle. Wearing a silicone hot mitt or other long-armed oven mitt, dip the sugar cubes into the hot liquid to moisten them. Light sugar with a match and allow to burn. Continue dipping sieve into liquid until sugar has melted completely into the glogg.

Cover kettle if you need to put out the flame and when you are done. Put mixture through the sieve to strain. Cool.

Keep in closed bottles.

Heat glogg before serving, but do not boil. Serve hot in wine glasses with a few raisins and almonds in each glass.

WARNING: Flaming alcohol can be dangerous! Never attempt this anywhere near a stove, especially one with a gas burner. Consider practice tests outdoors in a safe place where there are no children or pets until you become familiar with this technique, or alternatively, skip the step where the alcohol is lit and simply dissolve the sugar in the drink.

This can be prepared and served successfully using a Crock-Pot.

It's a sweet soup w/raisins, prunes, tapioca pudding, etc.
Here's a copy of a recipe (some prefer it cold but I prefer it hot):
Sot Suppe

6 cups water
1/3 cup sugar
1 tablespoon quick-cooking tapioca
1/4 to 1/2 teaspoon cinnamon (depending upon how well you like the taste of cinnamon; you can also use a cinnamon stick)
2 cups dried fruit (use any kind you like: apples, apricots, peaches or a mixture of dried fruit)
1 cup raisins (dark or golden)
1 cup dried prunes
1 tablespoon lemon juice (you can also use 1 teaspoon of dried lemon rind or several slices of fresh lemon)

In a medium saucepan, combine the sugar, tapioca, cinnamon and water. Bring to boiling, stirring constantly. Stir in fruit (including the lemon if you’re using sliced lemon) and heat to boiling again. Cover. Simmer for 15 minutes, or until the fruit is tender.

After the fruit is tender, if you're using lemon juice, stir in the lemon juice (or teaspoon of dried lemon rind). Serve either cold or warm, depending upon your preference. If you use a sliced lemon, remove the lemon rind before serving.

Yep, it's a Christmas Fruit Cake but not like the regular old yucky fruit cake my Southern side of the family used to make (AKA the brick) They do make Stollen at a bakery here in NC...so that's easy for me to find but it's quiet pricey.

my Mom asked and we all agreed, she wanted to do just all Polish foods. she never asks for anything so thought, why not

cant wait to taste everything, I am in charge of the desserts. Plan to do these on Monday.
