the dough is similar to sugar cookies (if I remember correctly) you roll the dough into a ball and then roll it in a cinammon and sugar mixture. As they bake they flatten out into circles...they are yummy!!

Good only if you stop at maybe 3 or 4...not a dozen..ok maybe a dozen and a half..

Ingredients

1 cup butter
1 1/2 cups sugar
2 large eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon

Directions
1Preheat oven to 350°F.
2Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl.
3Combine flour, cream of tartar, baking soda and salt in a separate bowl.
4Blend dry ingredients into butter mixture.
5Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
6Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
7Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
8Coat by gently rolling balls of dough in the sugar mixture.
9Place on chilled ungreased cookie sheet, and bake 10 minutes.
10Remove from pan immediately.

1 yellow cake mix
2 eggs
1/4 c oil
3 tbs sugar
1 tsp cinnamon

Preheat oven to 375.
Mix together cake mix, eggs and oil with a spoon until dough is well blended. In a small bowl, mix together cinnamon and sugar. Roll dough into 1 inch balls, roll in cinnamon-sugar. Place cookies 2 inches apart on cookie sheet and flatten slightly with the bottom of a glass. Bake for 8 mins or til set, do not let them get too brown. Cool on cookie sheet for about 1 minute, then remove to cool the rest of the way.

**SOFT COOKIE TIP: To keep soft cookies from getting hard and dry, store in an airtight container with a slice of white or wheat bread, change the slice of bread every day or two. The moisture from the bread keeps the cookies from drying out...this really works, I've done it! The bread will get quite hard, but dont throw it away, use it to make toast or bread pudding if you have enough slices! :)
