It's just going to sit there and simmer for a long while. It is a cheesy broccoli potato bacon soup. Yum! I'll make a salad to go with it and dinner will be good tonight.

I don't have the exact recipe written down so you may want to "taste and change" as you go along.

First I take about 8 good sized potatoes and I peel the skins off. I boil the potatoes until they are almost soft enough to mash, but I like them to be a tiny bit less than perfect, a little lumpy if you will. Then I basically make mashed potatoes with them and I add a bit more milk than normal so it is a little soupy.

In the microwave I steam a head of broccoli and cut it up into small pieces. I also crumble bacon (already cooked as well, maybe 6-8 pieces or a half package).

I take a brick of sharp cheddar (normally frozen because I always freeze my cheeses so they just crumble as they are a little thawed). The one I used today was an 8 oz brick. I added about 3-4 oz of medium cheddar that I had in the fridge too. I threw that into the pot with the potatoes and let it all melt. I stirred it a few times too.

Then I added about 1/2 tsp salt and 1/2 tsp pepper.
And the broccoli and bacon.

I let all of that get to a good boil and then I simmered it. It will just sit there and get all soft and bacony (my not real word of the day!) Yum!

It is easy to make, but I would hate to try to figure out how many calories and fat grams it has. :0)
And now I will have to tell Dh that someone asked me for a recipe! He will think that is a hoot because I am not known for my cooking!
