I didnt know if you were looking for a canning recipe or not, but thought you might like this fresh one :)
Fresh Salsa
1 cup chopped seeded plum tomato or chopped seeded roma tomato (about 4)
1/2 cup chopped onion (I have used scallions instead too...very good)
2 cloves garlic, minced fine
2 tablespoons chopped cilantro leaves
1/4 teaspoon cumin powder
1 tablespoon lime juice
1 tablespoon grated lime rind--optional
1 teaspoon olive oil
salt and pepper to taste
1/2 jalapeno pepper, seeded and finely minced (wear rubber gloves when handling)-you can use less if you dont want it too hot.

Mix all the above in a bowl...you can serve immediately or let it set for a bit (like maybe an hour or two).
Store leftovers in an airtight container for up to 5 days.

Hi Vickie,

I made a ton of mrs wages and KERR spaghetti sauce & salsa last year w/ my extra tomatoes. We LOVE IT! I seen Fareway in Charles City had Mrs. Wages prepackaged mixes in their clearance cart. Give a call and see if they have any salsa in there. I think they were priced at 99c.

Also, did my pphf get to the school RAOK person? I never heard back for either of you.
