when the plant starts to die ( turn brown ) the potatoes are ready, you can
take a fork and gently move the dirt away to see if there
are any potatoes under there and then place the dirt back,i have
had people to tell me that they get some of the potatoes and
cook them,if you do this be sure to put the dirt back over
the potatoes, how long have they been planted

It sounds like your potatoes are ready..if the plant is dead and brown you can dig them..make sure you dig them when the ground is dry if you dig them while the ground is wet they will rot and try to knock as much dirt off of them as possible store them in a cool dry dark room..like a cellar or that is where we always put them when we were kids..

if you do any canning you could can the smaller ones that is what i always do..i always sort through mine and take the small ones and can them they are soo yummy and so easy to cook then.
hope this has helped
