Also, does anyone make salmon patties? My recipe calls for canned fish (salmon, mackeral, tuna), egg, ground up soda crackers. can I use oatmeal instead of the crackers like meatloaf? Just curious if anyone has tried this.

I HAVE USED BLUEBERRYS,RASPBERRYS,PEARS,NECTERINES AND PEACHES IN PLACE OF APPLES I HAVE USED THIS RECIPIE SINCE 2004 AND LOVE IT, IHAVE EVEN USED SUGAR SUBSTATUE IN PLACE OF THE SUGAR.HOPE YOU LIKE IT TERI


Ingredients
8 cups peeled, cored, and thinly sliced apples such as Gravenstein, Granny Smith, or Stayman Winesap (about 2 1/4 lb. total)
1/2 cup granulated sugar
3/4 cup plus 2 tablespoons unbleached or regular all-purpose flour
2 teaspoons ground cinnamon
1 cup regular rolled oats
3/4 cup firmly packed brown sugar
1/2 cup (1/4 lb.) butter or margarine, cut into 1/2-inch chunks
3/4 cup chopped pecans
Vanilla ice cream (optional)
Preparation
1. In a 9-inch square baking dish or shallow 1 1/2- to 2-quart casserole, mix apples with granulated sugar, 2 tablespoons flour, and cinnamon.

2. In a bowl, combine rolled oats, brown sugar, butter, and 3/4 cup flour. Rub with your fingers until butter pieces are no longer distinguishable. Stir in chopped pecans. Sprinkle topping evenly over apples.

3. Bake dessert in the middle of a 350° oven until apples are tender when pierced and topping is browned, 45 minutes to 1 hour. If topping browns first, drape with foil.

4. Spoon the apple crisp, warm or cool, into bowls. Top portions with vanilla ice cream.

Buttermilk Oatmeal Pancakes

2 cups quick oats, uncooked
1/2 teaspoon baking soda
2 1/2 cups buttermilk
1 cup sifted all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1/3 cup melted shortening or liquid shortening
2 eggs, beaten

Mix oats and soda to buttermilk. Let stand 5 minutes. Sift together flour, baking powder, salt and sugar.
Add sifted dry ingredients, shortening and eggs to oats mixture. Stir until combined.
For each pancake, pour about 1/4 cup batter onto hot, lightly greased griddle. Bake to a golden brown, turning only once. Serve hot with butter and syrup.

You can substitute for buttermilk if you dont have it:
Just use 2 cups milk and 2 1/2 tablespoons lemon juice or vinegar mixed together and let sit for 5 minutes before adding to pancake recipe :)

Actually, that memory of cleaning up after my own two sons crossed my mind with your post. Cooked oatmeal DEFINATELY resembles wallpaper paste! Just try cleaning it up!
