I put my thinking cap on today and dreamed up a new way to fix it.
I poached boneless chicken in chicken broth, lemon juice and tarragon
Cut in chunks and added toasted walnuts, celery and purple onion.
Mixed together mayo, lemon juice and tarragon and mixed all together
It really is good and will taste better tomorrow when it sets overnight and the flavors all blend together

We do have a number of pets (2, plus one extra cats), two birds and one ferret, but we are pretty mellow. Not a lot of space, but a lot of laughter.
