tuna salad-with eggs, relish, mayo, miracle whip, whatever combo you personally like (eat on toast, crackers or alone on top of lettuce)

i sometimes put tuna in my salads

tuna casserole-boiled macaroni with cream soup, cheese, tuna, etc

tuna patties-mix with bread crumbs, some parsley, spices, egg, etc and fry as patties

tuna stuffed small tomatoes

that's about all i can think of for now, but would be really happy to hear other ideas! LOL!

We *love* this recipe. I always make it for potluck type gatherings and get great reviews. (Except from the people who don't like cilantro ... if you don't like cilantro, you're not going to like this recipe.)

**IMPORTANT NOTE**
You need to cut the mayonnaise by 1/2 (or even 2/3, if you prefer your tuna salad on the dry side). The amount of mayo called for is waaaay too much.

The recipe I know uses cans, and is just fine with non-fat mayo. I can only eat albacore; a long time ago I ate so much 'light' tuna that I had an epiphany--I was eating 'cat food--and couldn't touch tuna of any kind for a year.

Inspired by a 'Brazilian' food cart on the U.C. Berkeley campus, to reduce recipe, do something else with some of the canned vegetables.
mix
4 well-drained cans tuna
4 medium carrots, shredded
1 can niblets corn (or other drained corn, would work with fresh or frozen, too)
1 can hearts of palm, chopped
dill, ground pepper, mayonnaise, salt to taste

The food cart also had a chicken salad with the same vegetables. 9|1|All these recipes sound yummy, I'm gonna try some, my hubby and kids love tuna :)|RebekkaVA|queen_vulture@msn.com|01:45:48|03/07/2009|
