I was looking for something new to make and lately I just hate eating meat.....but was craving chili...so I started the chili in my crockpot this morning on low for six hours....and made some corn bread cupcakes....it was sooooooooooooo delicious....I'm glad I tried it! 1 onion, diced
2 cloves garlic, minced
1 red or yellow bell pepper, chopped
2 carrots, grated or sliced
1.5 cup corn
1 zucchini diced
2 cans kidney beans
2 15 ounce cans of diced tomatoes
.5 cup water
1.5 tbsp. chili powder
1 tsp. cumin
.5 tsp. red pepper flakes
dash cayenne pepper
dash tabasco sauce (optional) (I didn't use any tabasco sauce in mine)

Combine all ingredients in a crock pot or slow cooker. Cover and cook on low for 6-8 hours.
