And if so, what type of texture change is there? We mainly use them for rice crispie treats so some change is okay but hate to ruin a big batch bc they are gross when they get finished.

You can take out as many as you need at a time, and they thaw in about 1 minute. Just found this trick out from my mom, and it works great!

They're still just as fresh (within a reasonable amount of time...lol...i don't know if they'd be that way after a year).
I've never frozen them and then used them in rice krispie treats, but I think they'd be okay in that too.
I used to buy one bag of marshmallows, and by the time anyone had a craving for them, they'd be rock hard. I leave them in the bag they came in and just put a twist tie on it, but putting them in a ziploc bag or airtight container would probably help keep them last even longer.
