This is kind of a hot and spicy chicken salad but it gets rave reviews when I take it to work when we have a luncheon and it is the first thing gone and it seems I never take enough.
Use boneless chicken breasts and if they are real thick I cut them in half
Wash chicken and pat dry and lay on a large piece of aluminum foil.
Sprinkle both sides of the chicken with the following and you will do this to your own taste and I sprinkle generously:
McCormick Ground (Cayenne) Red Pepper
Lawry's Garlic Salt
McCormick's Garlic Pepper with Red Bell & Black Pepper
Saute in olive oil until done and lay on paper towel lined plate
Cut chicken in small bite size pieces and add chopped celery (I add lots of celery) and Hellman's Mayo until you have the consistency that you want.
The longer it can sit for the flavors to all blend together the better it will taste.

Harris Teeter chicken salad is very good though--I do not like Lowes Foods chicken salad

i think today when i'm at the store i'll buy some chicken and make me chicken salad
