... I usually have it all done by now -- start the day after Thanksgiving. But my room where we put the tree is loaded with stockpiles that aren't moving!!! I haven't even touched the stuff I got after Christmas last year - what a disaster. So I'm going thru that stuff now and deciding what to do with it so I can put the tree in there.

I think I better give up the baking of cookies until later this month. I made several types of cookies and ate so many that I keep getting sick to my stomach. NOT GOOD in a person that had gastric bypass. What's wrong with me???

I'm going to reconsider baking this year. It truely gets me in the Christmas spirit but I can't handle it. Perhaps in a few weeks I'll make biscotti and take it to work for my co-workers.

I made the fudge about 2 weeks ago and sent it with my parents so that I would not be tempted to eat it. This weekend I had to make something for several gatherings that are coming up this week, so I made easy truffles. I used some of the dark chocolate chips I bought months ago when they were $1 and my eagle brand milk that I picked up cheap weeks ago too. I also made a batch of semi sweet truffles. I put them in the freezer so that I can only eat them after I really think about the consequences of eating them, LOL!

Now if I can just keep to the better health goal and not gain weight this month that will make me happy. This is a hard month that's for sure! I find that I do pretty good as long as I am writing down everything I eat, including the little tastes of this and that as I am cooking for everyone else. That way I can stay under or at my calorie goal each day. 11|1|Anyone have the recipe for the Cake Frosting Fudge? I can't find mine. CHOCOLATE FUDGE
1 tub chocolate frosting
Microwave for 1 minute
add 1 cup peanut butter, and microwave for 1 minute.
Add chopped nuts.
Put in 8X8 pan lightly sprayed with non-stick spray.
Refrigerate.

Experiment a bit and have fun......
Chocolate chips/chocolate frosting (this is for the die-hard
chocolate-lovers)
Peanut Butter chips/chocolate frosting (tastes like Reese's
Peanut Butter Cup
Chocolate chips/vanilla frosting (not as chocolately)
Mint chocolate chips/chocolate frosting (tastes like Andes mint)
Cherry chips/chocolate frosting (tastes like a chocolate covered
cherry)
Vanilla chips/any flavor frosting
Milk chocolate chips/coconut pecan frosting

Use chocolate frosting for chocolate fudge.

Use vanilla frosting for peanut butter fudge.

Really really easy. My 4 year old makes it close to by himself!!

..I bake every year, it simply wouldn't be the holidays in this house if I skip THAT particular tradition!! I always make TONS of the Fantasy Fudge from the marshmallow fluff jar. In addition, I've pulled out my recipes for a couple different cookies I like: one is those pnut butter cookies w/the Hershey's kiss in the middle, my step-kids love 'em, though Dh does not.

I still have to sort thru my recipes as I want to make more cookies, probably some sugar cut-outs, as I have a TON of C'mas cookie cutters---some of which I've never even used yet!!

Today I'm going to plan to finish up my wrapping, and addressing all my C'mas cards. I'll probably start baking the wk. of the 19th, as my older son arrives on the 21st. I want to have everything pretty much done by then so I can just visit with him and relax!!
