I found this recipe in a magazine and made these last night with my son. These are soo much fun to make and not messy at all, I let the dough sit in fridge for 5 minutes, so it was not sticky to handle at all...was just like playdough, so much fun!!

WHAT YOU'LL NEED:
1 CUP PEANUT BUTTER,SMOOTH OR CRUNCHY
1 CUP SUGAR,PLUS MORE FOR ROLLING(I used a little less than 1 cup, as you make up the difference in sugar when rolling)
1 EGG

Heat oven 375f. Stir together the peanut butter, sugar, egg in a large mixing bowl.
Roll dough into 1 inch balls. Put some sugar on a plate and roll balls in it to coat. Place 2 inches apart on ungreased cookie sheets.

Press each ball down with a fork to make a crisscross design. Bake for 10 minutes or until cookies just start to brown on the edges. Remove from the oven and let cool on wire racks.

** Thought these would be great to make for halloween/x-mas using cookie cutters and could sprinkle with colored sugar, or to make thumb print in them and when cooled fill with melted chocolate or peanut butter..Possibilities are endless!
