im having issues getting a few of my jars to seal correctly. I dont know what the deal is but its driving me crazy. Can anyone help???

are you using new lids? If not you have to use new lids..

Here are some other things to check

if there is even a little piece of hair or dust in the jar around the top or on the lid it wont seal
if your jar has the smallest crack in it around the top somewhere it wont seal

and if your not getting your stuff that your putting inside of your jar hot enough or if your not leaving it in the pressure cooker long enough or how ever you can whether its in the pressure cooker or something else you have to make sure that your leaving it in the recommended amount of time.

I hope this helps but normally when I have a jar that comes unsealed the first thing I do is check the top of the jar or the inside of the lid to see if there is anything on it and then I check the jar.

I think, LOL I replaced the lid on one of them as it just wouldnt cooperate and the other one had a tiny hole in the side of the jar and air was getting inside of it and you know how hard it was to take a hot jar and dump it into another jar without making a mess, LOL

But there all done well they were last night and let me tell you my house was smelling so good yesterday. Im thinking im going to have to go hunt me up another big batch of apples so that i can make so more because that apple crisp was delicious last night. Nothing like eating something completly homeaid!!! Of course i didnt grow the apples myself but its all the same

I actually saved some seeds from the apples and im going to see if i can get some apple trees growing

Oh yea and the kids had a blast when we took all the apple peels and fed them to a friends horses

You can easily make apple sauce & then freeze that to eat later or to also make apple crisp. Yum! :)
Just peel & slice up the apples & cook on low heat in kettle til mushy. Add maybe a 1/4 C. of water or less, just so it doesn't scorch. Towards the end of the cooking process, add however much sugar you want (usually about a 1/2 to 1 C. per 2 qt. kettle) & then cook for just a couple min. more - til sugar dissolves. Cool completely before putting the applesauce into freezer bags or plastic freezer containers.

when i canned apples many yrs ago i would take the
apple peels and boil them to make apple jelly,try
it the next time you can apples,the jelly was delish
with more flavor than that you get at the store :O)

Here's how my mom does it:

Peel, core & slice apples. Have a small bowl of lemon juice handy. Lightly dip the apple slices in the lemon juice & place on a cookie sheet lined w/waxed paper. Place in freezer for a couple of hours. Do NOT thaw. Remove the apple slices & put in freezer bags or freezer containers & put in freezer. Thaw apples slices to use in pie, apple crisp, etc.
The lemon juice prevents the apple slices from browning.

I use 20 cups of apple peels, with some apples cut up in there, like the ones that are too small to mess with. The add 20 cups of boiling water, and 2 Tbl of cream of tarter. You let this sit for 24 hours, then you strain through a jelly bag, put back into a clean kettle, add sugar to taste and boil till the sugar is disolved well. Great warm too with spices added to it.
