I spray the peppers with nonstick spray, then roast them about 10 minutes per side (until blackened)x 4 sides. then place in covered bowl for about 30 minutes to loosen skin, then I freeze in individual ziploc bags. Defrost under warm water still in bags, then peel skin and cut. I use these in pasta salad and always get compliments. They are very tasty. They's probably be yummy in potato salad too.
