My 13 year old Grandson does every sport there is and we are always so pressed for time! He gets home from school after practice at 5:30 and we leave 15 minutes later for his basketball games. I usually have a bowl of soup waiting for him, he has to run so it needs to be light. When we get home, he is starving and so many times I have picked up fast food or a pizza. He would prefer a homecooked meal and his favorites are casseroles. Any suggestions on favorites, easy, economical and/or foods that freeze well or don't? Thanks for any help!

One I did and we called it cavatini after what Pizza Hut does on their buffet.

Plain basic version:
A small box of small shell pasta cooked and stir in one can or jar spaghetti sauce.
Pour in a dish and cover with a package - 8 oz. of shredded mozzarella cheese.
Microwave till cheese melts.

Make it "more" by frying a pound of ground beef with chopped onion and/or green peppers.
Add a can of mushrooms pieces as they are cheapest, if so desired.

3 . "Can you do a crockpot meal?"

When we have nights that are crazy with school, I like to use my crockpot. After the meal is ready, I have a setting for "keep warm" on my dial. I put the meal together before I leave for work and move it to warm when I get home. This allows each person to eat whenever they can and still have a warm meal. For ME, it also works if hubby has to dish some out himself while we are not home.

I have a list of meals on an index card if you want ideas? I try to rotate through the meals so we are not eating the same protein all the time. The leftovers make great sandwiches or freezer meals for another day :)

I haven't really cooked in years and I am finding it difficult.

My boys are also 13 (where does time go?) and I sent the meal ideas they like the best from my list. I am actually on my third crockpot since college because I have worn them out. My current one is an oval 6 quart that I found online from a gal who posted a ton of extra brand new wedding gifts. She needed cash and only asked $15 new in box!

We have funeral dinner for families. If the mother passes away. The church women make TV dinners out if the food left from funeral dinner. And take to family and they freeze them for future meals.
