& then fill the cups not quite half full, like is done w/reg. muffin tins? And I'm guessing they'd have to bake a little longer (maybe at a little lower temp to ensure done-ness) since they're bigger, maybe 10 min. or so longer.
I've made "pancake" & "cake" muffins before using pancake mix & cake mix (in reg. size muffin tins) & adding fresh blueberries to the pancake mix. They've turned out really well & seemed to be a little more moist than reg. muffin mix. I'm sure a pumpkin cake mix would work, & then top them w/cream cheese frosting. Yum!
You could also maybe try lining the tins w/the paper cupcake liners....
Just a couple of ideas. ;)

ETA: An apple strudel mix also works really great & can be eaten w/ice cream for dessert, plain or frosted w/a cinnamon type frosting. :)

I was thinking tho that baking them a little longer at a lower temp might help ensure they're done in the middle but w/out making them hard/dry or burned on the outside, kwim?
